Cold Hand Crack in Raw Food Quality

Our organic cashews are renowned for their incredibly delicious, creamy flavor, complemented by a delightful crunch that's perfectly balanced. Each bite is a testament to the love and care we pour into crafting these natural snacks at every stage.

The journey begins on our farms in eastern Indonesia, where the cashew trees are cultivated without any genetic modifications, nurtured naturally with the use of only organic fertilizers, and free from pesticides, adhering to both local and international organic standards.

Once the cashew apples are harvested by hand, they undergo a unique process known as the 'Flores hand-cracking' technique, a method originally developed by Rudolph Heering at PMA Indonesia. This technique involves manually cracking the hard shell to reveal the soft, white, creamy kernel inside. After a meticulous hand-cleaning process, the raw kernels are slowly dried at 45°C (113°F) for three hours. This gentle drying process ensures that the kernels retain their natural, organic integrity, allowing them to be labeled and sold as 'raw organic' food.

Research has confirmed that the Flores hand-cracking method is the most effective way to preserve the beneficial compounds in cashews, such as beta-carotene, vitamin E, healthy fats, and thiamin, maintaining them close to their natural levels. [Trox, Jennifer, et al. "Bioactive Compounds in Cashew Nut (Anacardium occidentale L.) Kernels: Effect of Different Shelling Methods". Journal of Agricultural and Food Chemistry 58. April 2010.]

Not only do these methods preserve the beneficial compounds, but they also preserve the natural, creamy-sweet taste of the cashews. Furthermore, we refrain from adding any salt or additional flavors to our organic cashew snacks, ensuring that you receive the authentic, delicious, and nutritious essence of the cashew.

What is Raw Food?

A raw food is defined as food prepared without excessive heating above 42 degrees Celsius (115 degrees Fahrenheit).

The concept behind this is to preserve the nutritional quality of vitamins, minerals, proteins, and enzymes in their most natural and healthy form.

This means avoiding cooking, at least not in the traditional sense. Individuals who follow a raw food diet often have a strong interest in natural health and organic whole foods, both of which can be cooked.

They typically adopt this diet due to health concerns or events, seeking healing. There are numerous anecdotal stories of people who have successfully used raw foods to heal themselves.

Enzymes in Raw Food

Raw and living foods retain their enzymes. Raw food enthusiasts view enzymes as the life force of the food, aiding in digestion.

Enzymes also play a crucial role as catalysts for various bodily functions. The most delicate enzymes begin to degrade at 42 degrees Celsius (115 degrees Fahrenheit), so when food is cooked, not only are these enzymes denatured, but also some of the vitamins, minerals, enzymes, and proteins.
